Blueberry Cottage Cheese Parfaits

Serves 4

Ingredients:

Cheesecake Filling:
1/2 cup cottage cheese (I love Good Culture)
1/4 cup Greek yogurt
1/4 cup blueberries
1 Tbsp vanilla collagen or protein powder
1/2 tsp lemon juice
*option to add a drizzle of raw honey based on protein powder you’re using


Granola of choice (I like this no-sugar one)
2 Tbs. fresh blueberries

Directions:

  • In a blender, combine all cheesecake ingredients - cottage cheese, Greek yogurt, blueberries, vanilla collagen powder, and lemon juice. Blend until smooth and creamy.

  • Pour half blueberry cheesecake mixture into an individual container, sprinkle granola on top then pour remaining cheesecake over the top and let set for 1 hour or overnight.

  • Top with extra blueberries and another sprinkling of granola for crunch.


Tips

Use any fruit

This recipe would work with most fruits - strawberry would be a great swap.

DOUBLE UP

This recipe is great for meal prep. Make a few extra to have on hand for the week.
