Protein Bread

Makes 10-12

Ingredients:

1 container Good Culture cottage cheese (500 g)
5 organic eggs
4 cups One Degree Organics rolled oats (450 g)
1 teaspoon fine sea salt
1 teaspoon baking powder

Optional Toppings:
Furikake
Everything But The Bagel SPice
Sesame Seeds + Flakey Sea Salt

Directions:

  • Preheat the oven to 400°F.

  • Add all ingredients to the bowl of a food processor or blender and pulse until well combined, but the batter still has a bit of texture. For best results, layer the cottage cheese and eggs on the bottom and the oats on the top.

  • Use two spoons to shape 10-12 buns on a baking sheet lined with baking paper.

  • Bake in the oven for 20-25 minutes.

These taste best toasted. And can be frozen for up to 3 months.

To serve, cut in half and spread with butter + chia jam, make an egg sandwich, or use it as the bread for a lunch sammie with turkey and avocado.

Note: Protein content per bun is 6-7 grams.

Tips

ADD VEGGIES

Feel free to add veggies to this blend with 2 big handfuls baby spinach or a 2 large carrots, finely grated. Add them to the food processor or blender with the rest of the ingredients.

CINNAMON RAISIN

These buns remind me of bagels, one of my favorites being cinnamon raisin. To make this version blend 1-2 tsp. cinnamon into the batter and then mix in 1/3-1/2 cup raisins before scooping into buns.
