5 Rotisserie Chicken Salad Ideas


I love rotisserie chicken because there are SO many ways to use it. But I find it’s also an easy meal-prep item to burn out on.

I mean how many salads can you eat with chicken and avocado?

Here are 5 salad ideas to get you out of the lunch rut, but that can still be put together in 5 minutes or less.

I also tried to keep the ingredients at 10 or less, including the dressing.

You’ll notice the thing that really pulls each salad together are the fresh herbs. I know often times we buy them for a specific recipe, but you’ll quickly learn here how we add herbs to everything. They’re nutrient-dense powerhouses and add so much flavor to prevent mundane meals.

Rotisserie Chicken Salad Ideas

Each “recipe” serves one, easily doubled or tripled

Walforf Style

4-6 ounces rotisserie chicken
2 cups romaine or lettuce of choice
5-6 raw walnuts, crushed slightly
1/4 cup apple, diced or thinly sliced
1 small rib celery, thinly sliced
2 Tbs. chopped fresh herbs (chives, parsley, tarragon)

For the dressing:
1 Tbs. avocado oil mayonnaise
2-3 tsp. raw apple cider vinegar or lemon juice
drizzle raw honey
sea salt and freshly ground black pepper to taste

  • Assemble salad. Whisk dressing ingredients together. Enjoy!

TACO Style

4-6 ounces rotisserie chicken
2 cups romaine or lettuce of choice
1/4 large or 1/2 small avocado, sliced
1/4 cup halved cherry tomatoes
1/4 cup diced cucumber
1/4 cup black beans
2 Tbs. chopped cilantro
1 Tbs. pumpkin seeds

For the dressing:
Juice of 1/2 lime
2-3 tsp. olive oil
1-2 tsp. Siete jalapeno botana sauce

  • Assemble salad. Whisk dressing ingredients together. Enjoy!

Greek STYLE

4-6 ounces rotisserie chicken
2 cups romaine or lettuce of choice
1/4 cup diced cucumber
5 kalamata olives, halved
2 Tbs. chopped fresh dill or mint
2 Tbs. sheep’s milk feta (optional)
5-6 raw walnuts, crushed slightly

For the dressing:
Juice of 1/2 lemon
2-3 tsp. olive oil
drizzle raw honey
pinch dried oregano
sea salt and freshly ground black pepper to taste

  • Assemble salad. Whisk dressing ingredients together. Enjoy!

Thai Style

4-6 ounces rotisserie chicken
2 cups romaine or lettuce of choice
1/4 cup thinly sliced cucumber
1/4 cup thinly sliced bell peppers
1/4 cup thinly sliced carrots
1/4 sliced avocado
1/4 cup chopped fresh cilantro and/or basil
1-2 Tbs. chopped roasted, salted peanuts

For the dressing:
Juice of 1/2 lime
2-3 tsp. olive oil
1 tsp. coconut aminos
sea salt to taste

  • Assemble salad. Whisk dressing ingredients together. Enjoy!

COBB Style

4 ounces rotisserie chicken
1 slice cooked and chopped turkey bacon
1 hard boiled egg, sliced
2 cups romaine or lettuce of choice
1/4 cup chopped cucumber
1/4 cup halved cherry tomatoes
1/4 avocado, cubed
5-6 raw walnuts, crushed slightly
2 Tbs. chopped fresh parsley

For the dressing:
1 Tbs. avocado oil mayonnaise
2-3 tsp. raw apple cider vinegar or lemon juice
drizzle raw honey
sea salt and freshly ground black pepper to taste
