Grain-Free Power Porridge
Some days for breakfast, eggs or a smoothie just won’t cut it. But how do you get in your protein requirements and avoid spiking blood sugar first thing to avoid the crashes/cravings later in the day?
Enter, this grain-free “oatmeal” bowl filled with fiber and phytonutrients + a scoop of collagen for a protien boost.
It’s my favorite on a cold winter day, but also works equally well in the summer at room temp with fresh berries or peaches on top.
Grain-Free Power Porridge
Serves 1
Ingredients:
2 tablespoons. unsweetened shredded coconut
1 tablespoon raw pumpkin or sunflower seeds
2 teaspoons chia seeds
1/2 teaspoons vanilla extract
Pinch fine sea salt
4-ounces boiling water
2 teaspoons raw flax meal
1 scoop collage proteinFor serving —
1⁄2 cup fresh raspberries or blueberries
Coconut yogurt for topping
Directions:
Grind the shredded coconut, pumpkin seeds, and chia seeds together in your blender or a spice grinder. This step is optional, but makes for a creamier porridge.
Transfer to serving bowl and cover with 4-ounces boiling water. Allow to sit for 5-10 minutes or until chia seeds have gelled to create a porridge.
Stir in flax meal and collagen.
Top with berries and yogurt.
