The Easiest Fish Tacos


I’m the queen of no-recipe recipes and these fish tacos are one of our go-to weeknight staples.

Use any fish you like, but I prefer halibut as it’s mild and holds up well when cooked. I’ll get it from our local market, or I also keep single-serve packs on hand in my freezer from Vital Choice. Simply defrost in a bowl of cold water for 30 minutes and they’re ready to cook.

I’m not giving you exact ingredient quantities here because you can truly make this for as many or as few people as you’d like.

The Easiest Fish Tacos

Serves 2-4 (easily adapts)

Ingredients:

For the fish:
1-4 portions white fish (I like halibut, 4 ounces per person)
spices: chili powder, cumin, paprika, garlic powder
salt, olive oil (to taste)

For the slaw:
1/4-1/2 head purple cabbage (or slaw mix from grocery store0
herbs: cilantro, jalapeno, scallions
juice from 1 lime
salt, olive oil (to taste)

To assemble:
tortillas of choice, 2-3 per person (organic corn, cassava, almond)
taco toppings — avocado, cilantro, jalapeño, lime, hot sauce, sour cream, pumpkin seeds

Directions:

For the fish —

  • If needed, defrost fish in cold water for 30-minutes.

  • Generously coat in equal amounts of chili powder, cumin, paprika, garlic powder

  • Sprinkle with salt and drizzle with olive oil — toss to coat.

  • Place on parchment lined baking sheet and roast in the oven (400 degrees) for 6-8 minutes.

  • (You could also cook them in a skillet on medium-high heat for a more charred taco, but I like easy clean-up.)

For the slaw —

  • Use whatever cabbage you have, I had purple in the fridge — slice thinly. Or use a mix from the grocery store.

  • Finely chop/slice cilantro, jalapeño, and scallions.

  • Toss the veggies together, then add lime juice, drizzle of olive oil, a pinch of sea salt.

  • Squish together with your hands until the cabbage starts to break down

  • Let sit while the fish cooks.

Taco Assembly —

  • Prep any other toppings you’d like - avocado, cilantro, jalapeños, pepitas, sour cream and hot sauce are our favs.

  • Char tortillas of choice over the stove top (this takes them to the next level).

  • Add your fish as the base, top with avocado, slaw and all the other fixings.
