Sheet Pan Gnocchi - Pizza Style
I love this recipe concept as you can adjust the ingredients based on what’s available in your fridge and also personal preferences of everyoe in your household.
I make these on individual quarter sheet pans which means everyone gets their own little tray. For myself, I put chicken sausage and less gnocchi. Ravi didn’t have the sausage and added more gnocchi, and for Leena, I did a try of just gnocchi with a few veggies and spices for flavor/exposure then covered them in grated parmesan cheese.
Feel free to swap out the veggies too — cauliflower would work well in place of the broccoli. And you could also wilt in some spinach or baby kale at the last minute.
Sheet Pan Gnocchi - Pizza Style
Serves 4
Ingredients:
1 pint of cherry or grape tomatoes
1 orange bell pepper - sliced thin
1 yellow bell pepper - sliced thin
2 large shallots - peeled & sliced thin
12 oz. cauliflower gnocchi (I like Trader Joe’s or Whole Foods)
4 pre-cooked, chicken sausages - cut into rounds
2 Tbsp. of extra virgin olive oil
1 tsp. dried Italian seasoning
1 tsp. fennel seeds
pinch red pepper flakes
sea salt and freshly ground pepper, to taste
fresh ground pepper
1 bunch broccolini, cut into florets
For garnish
grated parmesan and/or ricotta (vegan options work too!)
fresh herbs like parsley and basil, chopped
Directions:
Preheat the oven to 425'. Line a rimmed baking sheet with parchment paper.
Dump the tomatoes, peppers, and shallots onto the prepared sheet pan along with the gnocchi and sliced sausage. Drizzle everything with olive oil, Italian seasoning, fennel seeds, red pepper flakes,I salt, and pepper. Toss to coat and spread evenly onto the tray.
If using multiple smaller sheet pans, divide ingredients accordingly.
Roast for 15 minutes until the vegetables begin to brown and tenderize. Then, add in the broccoli and roast for another 10 minutes .
Remove from the oven and top with grated parmesan and/or dollops of ricotta cheese. Sprinkle with fresh herbs and serve warm.

Make Ahead
Chop veggies ahead of time and prep sheet pans up to an hour before you want to put them in the oven.
Kid Friendly
Roast a plain tray of gnocchi and then top with parmesan for super happy kiddos.
