Parsley Detox Dressing

Is it okay to be obsessed with a salad dressing? Because I'm completely smitten with this one. 

It's bright, fresh, and the palest of green thanks to a big handful of parsley. 

I came up with this dressing as part of my spring 5-Day Refresh - a group program I run 4x/year as a way to seasonally cleanse our bodies using real, whole food. No juices, shakes, or cabbage soup here!

Bottled salad dressings are loaded with refined oils, sugar, and thickeners. Plus, they're so expensive! This dressing comes together in seconds, lasts most of the week, and costs pennies.

And as for why I chose these ingredients? Parsley helps our body remove toxins from the kidneys, lemon does the same for our liver, and garlic has been shown to reduce heavy metal levels in the blood stream. 

Parsley Detox Dressing

Makes 1 1/2 cups dressing

1-2 cloves garlic, chopped
1 Tbs. Dijon mustard
1 large handful parsley, washed, dried and roughly chopped
1/2 cup raw apple cider vinegar
Juice from 1/2 - 1 lemon (to taste)
⅓ cup extra virgin olive oil
Sea salt and pepper, to taste
optional: 1/2 tsp. raw honey

Place all ingredients in a blender and blend on high until a smooth dressing forms.  Taste and adjust the seasonings to your personal preference. 

Store in the fridge for up to five days, shaking well before each use.
