Easy, Oven-Roasted Artichokes (from frozen!)


I love artichokes. They’re probably in my top 5 favorite vegetables actually, but I used to never prepare them because breaking down a whole artichoke is just too time consuming and canned varieties just aren’t that exciting.

But when I was browsing the frozen section at Whole Foods one day I found frozen artichoke heats (Trader Joe’s has them too apparently) — and a whole new world opened up.

If you’re not familiar with artichokes, this is your call to try them. Because not only are they delicious and make any meal feel elevated — they’re also incredibly nutritious.

Artichoke Nutrition

  • Rich in fiber, folate, vitamin C, magnesium, phosphorus, and potassium

  • Contains the antioxidant luteolin which helps lower cholesterol

  • Supports liver health and detoxification by increasing bile production and regulating liver enzyme levels.

  • Improves digestive health. The prebiotic fiber inulin feeds our gut microbiome.

Easy, Oven-Roasted Artichokes (from frozen!)

1 bag makes ~ 4 servings

Ingredients:

1 bag frozen artichoke hearts
olive oil (I like using garlic or lemon for added flavor)
sea salt + freshly ground black pepper, to taste

Directions:

Preheat oven to 400 degrees and line a sheet pan with parchment paper.

Place frozen artichokes on prepared pan and coat with olive oil, salt, and pepper. Toss well to combine.

Bake in oven for 40 minutes until crispy and golden, tossing halfway through.

Serve warm as is for a simple side dish, toss onto a salad to make it feel extra special, or serve as a party appetizer with a side of Primal Kitchen Garlic Mayo mixed with a little lemon juice for dipping.
