Radicchio Lettuce Wraps


I eat a version of these at least a few times a week. They’re like eating a salad without actually eat one if you know what I mean?

I’ll usually add a side of hummus and veggies to round out and bulk up my plate.

If I need a protein boost, I’ll swap the hummus for cottage cheese or warm a side of bone broth to sip.

Radicchio Lettuce Wraps

Serves 1

Prep time: 5 minutes

Ingredients:

This is a choose your own adventure sort of recipe. Pick 1-2 from each category.

Base: radicchio, butter lettuce, or romaine leaves (3-4 total)

Fat: sliced avocado, tahini or hummus, feta cheese

Protein: sliced turkey or ham, shredded rotisserie chicken, or canned tuna/salmon

Flavor: dijon or yellow mustard, pickles, chopped olives

Bonus greens: microgreens, sunflower sprouts

Directions:

  • To assemble the wraps, place lettuce leaves on plate and add filling.

  • I tend to build my wraps in this order: base, avocado, mustard, protein, pickles, greens. You want anything saucy to sit between the base and the protein so it’s more contained.

  • Wrap up and enjoy!
