Nourish Bowl Inspo
Nourish bowls are my answer to what's for dinner (or lunch!) most weekdays. They're colorful and bountiful bowls composed of greens, veggies, carbohydrates, protein, healthy fats, and various toppings - a complete plant-based meal built to keep you fueled and satisfied.
In terms of ingredients, whatever's in your fridge is fair game. These bowls are a great way to use up leftovers and experiment with different flavors. Use your imagination, and get creative!
Proportion wise, aim to fill at least half your bowl (or plate) with dark leafy greens and colorful veggies. The other half should be roughly equal parts protein + carbs + healthy fats.
Your goal is to prepare + cook basic components over the weekend (think roasted veggies, washed + chopped greens, lentils, rice..). Then, when a hectic Wednesday night comes around, you're ready to assemble dinner in 5-minutes flat.
