An addictive mix of nuts, seeds, dried fruit, and a hint of chocolate. It's my go-to 4pm pick me up when I'm out and about between meeting and while traveling.
I call this my Girlboss Mix because it came about when Sarah Wragge and I needed an easy, but nutrient dense snack to serve at a promotional event. We ended up becoming obsessed, and apparently everyone else was too since we got multiple e-mails asking for the recipe (though it's not really a recipe at all!).
If you're curious, here's why I chose each of the ingredients:
Walnuts: Brain Food! High in vitamin E + folate + healthy fats
Almonds: High in protein + fiber + vitamin E + B2
Pumpkin Seeds: Rich in zinc and magnesium
Goji Berries: Anti-oxidant powerhouse + vitamin C + vitamin A
Wild Blueberries: More antioxidants! + resveratrol + vitamin C
Coconut Flakes: Healthy fats + iron
Cacao Nibs: Zinc + high levels of pytonutrients and antioxidants
Makes approximately 4 cups (12 - 1/3 cup servings)
1 cup raw walnuts
1 cup raw almonds
3/4 cup flaked coconut
1/2 cup raw pumpkin seeds
1/3 cup goji berries
1/3 cup dried wild blueberrie
1/3 cup cacao nibs
Mix everything together and store in an airtight container for up to 3 months.
