Baked Brown Rice

Sometimes I post other blogger's recipes just because I love them and want to share!

This recipe is from Alton Brown. It's the simplest and easiest way to cook brown rice and comes out perfectly every time. 

Baked Brown Rice

Serves 4-6

1 1/2 cups brown rice, medium or short grain
2 1/2 cups water
1 tablespoon olive oil or coconut oil
1 teaspoon fine sea salt

Preheat oven to 375 degrees. 

Place the rice into an 8-inch square glass baking dish.

Bring water, olive oil, and salt just to a boil in a saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy duty aluminum foil. Bake on the middle oven rack for 1 hour. 

After an hour, remove cover and fluff the rice with a fork. Serve immediately.

Store leftovers in the fridge for several days, or freeze in individual servings for up to 3 months.
