This is a favorite recipe from my most recent 5-Day Refresh (a group program I host 4x/year), and I just had to share it here with you all too!
Cooking lemon slices with garlic and olive oil creates the most amazing flavor, especially when smoked paprika is added. And, this dish comes together in literally 10 minutes making it perfect for a weeknight meal. I love it as a simple dinner with avocado on the side or as warming lunch when spring still has that little bit of chill left in the air.
Smoky Swiss Chard and Chickpeas
1 Tbs. olive oil
2 cloves garlic, thinly sliced
3-4 thin lemon slices, seeded with peel left on
1 (14-oz) can chickpeas, drained and rinsed
1 heaping tsp. smoked paprika
1 large head (or two small) Swiss chard, washed, de-stemmed and chopped
fine sea salt, to taste
Heat a large skillet over medium heat and add olive oil along with garlic and lemon slices. Sauté for 1-2 minutes, stirring often. Add chickpeas, a pinch of salt, and smoked paprika, then cook until lightly browned, about 3-5 minutes. Add the chopped chard and incorporate well, cover and cook until fully wilted, about 3 minutes more. If needed, add a small splash of water to help steam the chard.
Toss to combine and serve immediately along with an extra squeeze of lemon.
