Just in time for St. Patrick's day! With the name Erin I always have to post something green this time of year. It's bad luck if I don't, right?
So, I've got the most delicious Matcha Pistachio Hemp Energy Bites for you. Basically, I took everything green I could find in my panty and turned them into these emerald beauties. They're my new favorite blend for an afternoon energy boost thanks to the matcha (green tea) powder. The hemp hearts add healthy fat + protein and the pistachios have the most wonderful savory flavor that counteracts the sweetness from the dates.
If you don't have the matcha powder, these would be amazing without it as well. But I really do want you to try them with - and I've linked one of my go-to brands in the recipe below for easy ordering.

Matcha Pistachio Hemp Energy Bites
Makes 12-16 bites
1/2 cup cashews
1/2 cup pistachios
1/4 cup hemp hearts
1/4 cup shredded coconut
12 Medjool dates, softened*
2 tsp. good quality Matcha powder
1 Tbs. coconut butter
1-2 tsp. raw honey (optional)
pinch sea salt
Pulse cashews, pistachios, hemp hearts, and shredded coconut in a food processor until coarsely chopped.
Add dates, matcha powder, coconut butter, honey (if using), and salt to food processor and pulse until a slightly chunky paste forms and ingredients are well incorporated (you don't want it too smooth).
Roll the mixture into 12-16 bite sized balls and place them in a single layer on a parchment lined baking sheet or other pan. Refrigerate for at least one hour, until firm.
Store in an airtight container in the refrigerator for up to one week or for several months in the freezer.
*If dates are hard, soak them in warm water for 3-5 minutes before processing. Be sure to drain them well first.
