For a good six months after we first bought our Vitamix back in 2015, I made smoothies nearly every day - giant ones with lots of fruit, almond milk and nut butter. All topped with granola and more fruit.
I thought I was eating the healthiest and trendiest breakfast out there. But, I couldn't figure out why I'd feel jittery and have a headache around 11am. After all, I was simply following the smoothie bowl craze on Instagram and eating what every other wellness fanatic was eating. Then, we went on vacation and I stopped with my smoothie habit - favoring eggs, greens, and oatmeal while traveling. And guess what - no more headaches or mid-morning crash. I realized it was my three servings of fruit + granola smoothie bowl habit was the problem. So, I pretty much stopped smoothies cold turkey and switched to breakfasts higher in protein + healthy fats.
This goes to show that not everything on social media is as good for you as it seems or will work well for your own individual body - even gorgeous, colorful bowls topped with superfoods and berries.
Recently, I've started incorporating smoothies back into my weekly diet (1-2x/week) - but in a more thoughtful way. I've learned over time that in order to avoid the sugar crash and really fuel your body, smoothies need to have far less fruit and the portions should be smaller. I also skip the toppings. Add a dose of healthy fats and/or protein and it's the perfect way to supplement your day. My favorite way to enjoy them is post-workout or when I want a lighter, but super nourishing breakfast.
My current favorite combination is this Blueberry Coconut Beet version. The coconut and blueberries add just the right amount of sweetness while the ginger adds that needed kick - plus it's great for digestion. And don't be afraid of the beet! It's adds a slight earthiness to the smoothie, but is pretty much covered up by everything else I've thrown in.
Blueberry Coconut Beet Smoothie
4-6 ounces coconut water
Handful baby spinach
1/3 cup frozen blueberries
1/3 cup raw red beet, peeled + chopped
2 Tbs. coconut yogurt
2 Tbs. hemp seeds
2 Brazil nuts
1/2-inch piece fresh ginger
Place all ingredients in high-speed blender and blend for 60-90 seconds until completely smooth.
