As I've said many times before, I'm definitely not a good recipe developer when it comes to baking - but I'm trying! That's what setting New Years intentions are for right?...
But, I am very good at coming up with raw, naturally sweetened treats. And these definitely don't disappoint. I even think Santa would be quite happy to see these little guys waiting for him under the tree.
Raw Almond Coconut Sugar Cookies
Makes 10-12 cookies
2 cups shredded coconut
1 cup almond flour
1 Tbs. raw coconut oil
2-3 Tbs. raw honey or pure maple syrup
1 tsp. vanilla extract
1/4 tsp. almond extract
pinch fine sea salt
Add all ingredients to the bowl of a food processor. Pulse until a dough comes together and you can roll it into compact balls with your hands.
Scoop out rounded tablespoon portions and roll them into balls then flatten into cookie shapes. Sprinkle the tops with coconut sugar and place in the fridge for at least one hour to set.
Store, well sealed, for up to one week in the refrigerator, or for several months in the freezer.
