This recipe is inspired by a former coworker who would always buy roasted brussels sprouts at Dean & Deluca, then dip them in Dijon mustard (so good!). It's the perfect way to elevate this veggie into something a bit more special. I'm already thinking ahead to having these on our Thanksgiving table.
Maple Dijon Roasted Brussels Sprouts
1 pound brussels sprouts, halved
1 medium red onion, sliced
1-2 Tbs. extra virgin olive oil
1 heaping Tbs. Dijon mustard
1 tsp. pure maple syrup
1/4 tsp. fine sea salt|
8-10 grinds black pepper
Preheat oven to 425 degrees. Line a sheet pan with parchment paper.
Toss brussels sprouts with the red onion, olive oil, mustard, maple syrup, salt and pepper. Arrange on sheet pan in a single layer and roast for 30-35 minutes, tossing halfway through.
