What you need to make when you have too many ripe bananas and you don't have an hour to wait for banana bread to bake.
Caramelized Banana Bread Oatmeal
Serves one (easily doubles)
1 tsp. coconut oil
1 tsp. pure maple syrup
1 small ripe banana, sliced
several grates fresh nutmeg
pinch fine sea salt
4-5 raw walnuts, chopped
In a small sauce pan, heat coconut oil with maple syrup on medium-low heat. Add sliced banana, nutmeg, and salt. Cook for a few minutes until the banana begins to breakdown, but some pieces still hold their shape. Remove bananas from pan and set aside.
In the same saucepan, cook the Everyday Oatmeal or heat-up the Overnight Oats. For the overnight oats, add a few splashes of nut milk or water to thin. Once warm, add an extra dash of cinnamon and swirl in the walnut butter.
Transfer cooked oats to a bowl. Top with bananas and chopped walnuts.
