If there's one thing I truly love, it's good mezze or antipasti. Every week I pick and choose what to stock-up on from the bar at the grocery store - olives, grape leaves, marinated artichokes, sun-dried tomatoes. It's a different combination each week.
These bites then get added to salads, grain bowls, and pasta dishes throughout the week. It's the easiest way to round out meals and add an instant boost of flavor.
Here's a basic recipe for a favorite lunch salad of mine - topped with these Baked Sweet Potato Falafels.
The hummus dressing is what really pulls everything together, plus it's only 3 ingredients!
Mezze Salads with 3-Ingredient Hummus Dressing
4-6 cups mixed greens (I like arugula + romaine)
1/2 avocado, diced
1/2 cup diced English cucumber
1/4 cup diced radish
10 cherry tomatoes, halved
10 kalamata olives
4 grape leaves
Sumac, for topping (optional)
3-Ingredient Hummus Dressing (recipe below)
Divide all ingredients between two bowls, sprinkle with sumac, and drizzle with hummus dressing.
To bulk up the salad, top with protein of choice. Or these Baked Sweet Potato Falafels.
Note: If I don't have grape leaves, I'll add artichoke hearts or roasted red peppers. Trader Joe's has amazing canned grape leaves if you have a hard time finding them.
3-Ingredient Hummus Dressing
3 Tbs. plain hummus
2 Tbs. extra virgin olive oil
Juice from 1/2 lemon
Optional: squeeze of raw honey
Whisk ingredients together in a small bowl. Drizzle over salads.
