Garlic Ginger Fried Rice

This is the quickest weeknight meal.  I use Trader Joe's frozen Organic Brown Rice, and the dish literally comes together in minutes.  Serve with a side of steamed broccoli or sautéed kale (pictured), and you're set!

Garlic Ginger Fried Rice

Serves 2

1 Tbs. avocado oil
2 scallions, finely chopped, white and light green only
1-2 garlic cloves, minced
1 Tbs. fresh ginger, grated
1/8 tsp. red pepper flakes
2 cups brown rice
1 tsp. toasted sesame oil
6-8 sprays Bragg's Liquid Aminos (to taste)

2 eggs, fried
Kimchi
Gomasio (sesame seeds + sea salt)

Heat a cast iron skillet to medium.  Add oil, scallions, garlic, ginger, and red pepper flakes. Sauté 1-2 minutes until fragrant and just starting to brown. Stir in brown rice, sesame oil, and Bragg's. Cook another 2-3 minutes until heated through.

To serve: Finish with gomasio and top with a fried egg and kimchi. 

Notes:

To incorporate a green such as kale or spinach, add to the pan after you've sautéed the scallions, ginger, and garlic. Cook until wilted (with a splash of water if needed), and then add the brown rice, sesame oil, and Bragg's. I use generally use one bunch of finely chopped kale. 

As another alternative, shred one medium carrot and one small zucchini. Then sauté with the scallion, garlic, and ginger until just cooked. Toss with rice (or quinoa) and Bragg's. I omit the sesame oil for this version, but it's up to you. 

If you can't find Bragg's Liquid Aminos, substitute low sodium soy sauce or tamari. 

Gomasio is a sesame seed + sea salt blend, and I put it on everything. I like Eden Organics.
