Hi! I’m Erin Parekh, Holistic Health Coach and lover of all things plant-based.
For as long as I can remember, I've been excited to be in the kitchen. It’s my space for creativity and meditation. Somewhere that I can be unabashedly me.
And it’s my kitchen that brought me to where I am now.
I spent the majority of my early adult life struggling with anxiety, low self-esteem, disordered eating, and a 50-pound weight fluctuation. You can read the long version here. Essentially, I tried every diet book, workout video, and weight-loss supplement available - thinking that if I could just maintain a certain number on the scale, everything in life would fall magically into place.
As I’m sure you can guess - that wasn’t the case at all.
The real transformation happened when I decided to change my diet - not to diet. I channeled my love for being in the kitchen into a love for cooking whole, nourishing, nutrient-rich foods.
Slowly but surely, the weight came off (and stayed off!). Plus, I noticed my general outlook on life was shifting. I started experimenting with other wellness pathways, such as yoga and mediation. Over time, my anxiety lessened, I slept better, and I smiled when looking in the mirror. I finally felt connected with my true, inner self.
And it all started with something as simple as real food.

I believe that living whole and eating well are innate and deeply rooted in our souls. And it’s become my mission to guide and motivate you to see how easy living a healthy, joyful life can be.
I’ve spent years studying various health and wellness practices. I know what works, and I know how to help you make focused lifestyle changes that are in line with your individual goals.
My method starts by balancing your plate with simple, whole foods. Once you begin adding more vegetables and cutting out the processed junk, a lot more will happen than losing the physical weight. You’ll open yourself up to shed the emotional baggage too. Your mood will improve, you'll be sleeping better, and you’re outlook will completely shift.
We all deserve to live our best lives and be our best selves.

Erin Parekh, AADP, is a board certified holistic health coach and healthy cooking expert. Her motto "Because healthy doesn't have to be hard." guides both her coaching practice and recipe development. She believes that how we choose to nourish our body is directly related to our overall functionality - physically, mentally, and spiritually.
Erin received her heath coach training from the Institute for Integrative Nutrition in New York City and is Nutritious Life Certified through Keri Glassman, MS, RD, CDN. Her studies include everything from general nutrition to Ayurveda to autoimmune disorders to emotional eating to the gut microbiome and beyond. She is also board certified by the American Association of Drugless Practitioners.
Erin holds a B.A. in Art History (with biology and chemistry minors) from DePauw University and a M.A. in Visual Arts Administration from New York University.
She resides in Stamford, CT with her veggie loving husband, Ravi.
